Grilled white asparagus with ramson pesto, fried serrano ham and prawns

Ingredients:

For 10 people:

30 white asparagus
1 small bunch of ramsons
100 g toasted pine nuts
70 g grated Parmesan
1 dl good olive oil
10 slices Serrano ham
250 g prawns
salt and pepper
fresh herbs

Procedure:

Place the slices of serrano ham on baking paper on a baking tray. Place a piece of baking paper on top and then place a baking sheet on top. Place in a preheated oven at 200 degrees for about 15 minutes until the slices are crispy. Then cool.
Peel the white asparagus and cut off the ends. Boil them in lightly salted water until tender but crispy. Toss the asparagus in very little olive oil. Then grill them on a hot grill or grill pan. Season with salt and pepper.
Put the chives, pine nuts, grated Parmesan and olive oil in a blender and blend to make pesto.
Season with salt and pepper.

Serving:
Place 3 pieces of grilled asparagus on each plate. Put a strip of ramson pesto on top, arrange the prawns on the asparagus. Top with a slice of crispy serrano ham and garnish with herbs.
