Peel and break the asparagus. Steam for about 5 minutes in plenty of salted water. Cool and pat dry.
Strawberry vinaigrette:
Whisk the egg yolks with salt, vinegar and honey. Gradually whisk in the oil, very slowly. The vinaigrette will slowly thicken.
Faux earth:
Blend the nuts and add the rest of the ingredients. Put the mixture in a baking pan on baking paper. Bake the mixture at 120 degrees for about 45 minutes, it should be completely dry. Then run the mass on a fast chopper.
Serving:
Place two asparagus on the bottom of a plate. Dab on the vinaigrette at random. Sprinkle with the imitation soil.
